El Salvador Red Honey

Origin: Los Pirineos Farm, El Salvador

This is a very limited red honey lot from El Salvador grown by Diego Baraona, a 5th generation farmer at Los Pirineos Farm in Usulutan. This varietal is referred to as “Elite” Bourbon, as it was harvested from 90+ year old Bourbon trees!

After harvest, the coffee cherries were pulped, and a high level of sticky sweet mucilage was left intact. The coffee was then placed on raised drying beds in the shade, and dried for 25 days until reaching its ideal humidity. The result is a sweet, smooth, and complex cup highlighting notes of macadamia nut, black currant, rhubarb, and spice. Grab a bag before it disappears!
